Cream Cheese Filled Chocolate Cupcakes:

Ingredients:

  • 1/2 cup butter
  • 2 1/2 cups flour
  • 3 oz semisweet chocolate chopped
  • 1 egg, beaten
  • 1 cup buttermilk
  • 2 tsp vanilla
  • 1 cup sugar
  • 1 tsp baking soda

 

For Filling:

  • 2/3 cup coconut flats
  • 1 (8 oz) pkg cream cheese, softened
  • 1 tbsp sugar
  • 1 egg beaten

For Topping:

  • 1/2 cup pecans, choppedList item 2
  • 3 tbsp sugar
  • 1/2 tsp cinnamon

Procedure:

Preheat oven to 375OC. Prepare the cups by putting liners on them.

In a pan heated with medium fire, melt the butter and chocolate. Stir them completely until the mixture becomes smooth. Take out the pan from the fire and cool the mixture slightly. Add sugar, vanilla and buttermilk. Add the eggs into the mixture one by one. Stir the mixture until completely mixed. Gently add the flour. Mix the baking soda. Blend the mixture thoroughly. The mixture will result to a lumpy batter. Set aside first.

Make the filling for the cupcake. Beat the cream cheese, sugar and egg. Beat the mixture until thoroughly blended.

Make the topping. Combine all the ingredients: pecans, cinnamon and sugar. Mix thoroughly.

Get the cupcake holder with liner. Fill the 1/3 of the cup with batter. Put 1 tablespoon filling. Add batter again until the cup is 2/3 full. Do not fill up the cup to the brim. Make room for the cupcakes growth when heat is applied. Sprinkle the topping on top of the cupcake.

Bake the cupcake in the preheated oven. Check the cupcake if it is cooked by sliding out the inserted toothpick. If the toothpick comes out clean, then the cupcake is ready to go.

Take the cupcake out and allow to cool.

Frost the cupcake as desired.
